It all comes down to the quality of your work, and how much you value your work. I have clients that I know I can normally make them happy and hit a final in one or two shots, so I charge them a flat fee. If they are going to do numerous revisions they get an hourly fee, and that gets based on the complexity of the project. I quote all projects on an individual basis. Figure out how much your overheads will be... if you have any (that may be ground rent for office space, electricity, software, hardware etc. etc.) decide on a profit margin you want to make for the time it will take you (decide how much you would like to earn per year and work it back to find your hourly rate - remember you only work 7.5 hrs a day, 5 days week, for about 47 weeks of the year) you now have an hourly rate, times that by the time its gonna take you to produce. I'd also make it clear that any changes beyond the original scope of work will be charged at an hourly rate... i.e if something changes before you've modelled it don't worry - unless the new design is going to take many more hours to complete - but if they see your work and then decide they don't like their own design and want to try something else the have to pay for the additional time you'll need to commit... mark my words they WILL make changes probably more than once also. without being snappy tho dean this has been covered many times here already, a quick search should find much info!
