AJLynn
Use Photoshop to fake the reflection of the water for that shot, or render a reflective object in place of the water to get the reflection then combine in Photoshop. For the night rendering, try it with some light from the sky, a lot of contrast (light sources throwing light where you can see it), liberal use of the Glow(lume) shader, either Final Gather or light sources to give it some light level (do a search for Fakeosity) and Photoshop in lens flares and a blue color cast to everything and control levels and contrast. You'll probably end up rendering a lighter image than you want and Photoshopping it.
