Just go into the level manager and select all the layers in that reference and right click. Then go into properties and you will see Symbology overides. Cleick on the coulor and select whatever but before you ok it over on the right you need to turn this overides on. It doesn't look like a button but it is, then go OK and then apply. Now the reference is set but in the main drawing you need to turn level symbology on and this is found by going into level attributes and clicking on level symbology.
