Editable mesh with segments

quick an dirty way is to add an edit poly modifier on to your object, select the polygons that you want to segment and hit the "tesselate" option and increases the number of iterations to get the mesh density that you want.

 

or you could be more precise with the editable poly you could insert vertices, and segments to manually divide the polygons.
