Judder in animations

Like Justin says, it's to do with bitrate when encoding. It isn't unique to animations, video footage can suffer too and panning shots are particularly prone to this type of issue. Here's some pages that start to explain the problem, maybe you can find something helpful with a bit more digging around. From what I gleaned from these you want to be using constant bitrate rather than variable as this can cause large spikes during high motion (panning for instance) shots.
