My thought on the i7 2600K is that it is friendlier for budget builds, and allows the builder to spend a little more to get better workstation components throughout (better motherboard, SSD, more RAM, better video, better cooling solutions, etc). What you need to find out is that if getting that processor (Xeon) means the budget would be cut for the other components. If not, then it should make for a great and expensive machine. The real advantage to Xeons is that some models can go two to a (two socket) motherboard. If you go to the link in my signature, the High End configuration is a single i7 config and the Maxer is a dual Xeon. The latest Xeons (the 1600 series, I think they're called) are not for dual CPU systems, so I'd ignore them. The next round that releases will be for dual CPU but I don't have a date for those so I'm still recommending dual CPU boxes use X5600 series Xeons and single CPU use current generation 4 or 6 core i7.
